The ancient Egytians covered their temples and tombs with hieroglyphs, but scribes were also employed to record everything from the stocks held in the stores for workers, the proceedings in court, magic spells, wills and other legal contracts, medical procedures for different people and tax records. Clearly the scribes were central to the functioning of the civilisation as it was. Very little happened in ancient Egypt which did not involve a scribe in some manner.
Basically, the scribes were used to record information about many, many different subjects. They invented written scripts that could be used to help record the massive amount of information. Scribes were extremely important. It's no wonder that one of the most respected titles to have in ancient Egyptian times was "sesh" - "scribe".
